Nachitoches Meat Pies Combine 1 1/2LBS ground meat and 1 1/2LBS. of ground pork. Cook in heavy skillet over medium heat until meat is no longer red. drain and place back in skillet. Add one cup chopped onions, 1/2 cup green onions, 1 tsp salt, 1 tsp. black pepper, and 1 tsp. cayan pepper, 1/4 tsp. powdered all spice, 1/4 tsp. garlic powder. Saute untill clear. Add 2 beef bouillon cubes and dissolve until completly mixed with meat mixture. add 1 to 2 tbsps. of plain flour and combine well until mixture is thickened. Put in fridge until ready to put in pies. Homemade pie crusts make crusts with 2 cups self rising flour, 1/3 cup Crisco shortening, 1 egg beaten, 3/4 cups milk. Cut the shortening into the flour, add beaten egg and milk mixture to the flour.form dough into a ball, roll out about a third of the dough and cut out into circles of your desired size. Lay out circles and place the filling in the center and then place another circle on top of filling and fold under bottom circle crimp with fingers then press edges with a fork. Heat oil in a iron skillet and let heat up to 375 degrees.. drain on paper towel . walla yummy meat pies !! ENJOY!!!!! | ||||||||||||||||
